Named after the area in Burgundy, from which it hails Digoin, a genuinely French tableware company which has been manufacturing since 1875. If the French have been cooking with it for over one hundred years, then there’s no better recommendation.
The chicken brick – one of their most popular items and a great way to cook the bird. Pay attention now: here’s how it works: Terracotta clay is a porous material which, when soaked in water and then heated in the oven, provides a slow evaporation of steam from the pores, creating a steamy enclosed environment - perfect for achieving succulent, tender and full-flavoured roasts. Chicken bricks are also a healthier way to cook - meats are cooked naturally in their own juices, with more of the essential nutrients retained no need for any added fats.
These are traditional products created at their French peasanty best – which means that they cook fantastically. However, if you’re a perfectionist, and prefer form to function, then those hand glazed pieces may not be for you as the natural colours may vary from piece to piece and there can be some swirl lines in the glaze. For most of us however, these variations are part of what makes these products so individual and beautiful.
